Crispy Shrimp Dumplings with Spicy Salsa and Cucumber Salad

Shrimp dumplings
- 12-15 count jumbo shrimp

Cucumber salad
- cucumber
- kohlrabi
- garlic
- rice vinegar
- Thai chili
- sesame oil
- lite salt
Preparation
Mix the shrimp dumpling ingredients to prepare the filling.
Assemble the dumplings by wrapping the filling in dumpling wrappers.
Combine the dumpling salsa ingredients in a bowl.
Slice the cucumber and kohlrabi, then mix with the cucumber salad ingredients.
Warm cooking oil in a non-stick pan, add the dumplings, pour in 3-4 ounces of water, cover with lid, reduce heat to medium-low (around 3-4 on electric stove), and cook for 12-14 minutes.
