Crispy Shrimp Dumplings with Spicy Salsa and Cucumber Salad

Ingredients

Shrimp dumplings

  • 12-15 count jumbo shrimp
  • scallion
  • cilantro
  • napa cabbage
  • ginger
  • soy sauce
  • sesame oil
  • ground pepper

Dumpling salsa

  • lots of fresh ginger
  • lots of fresh scallion
  • garlic
  • cilantro
  • soy sauce
  • Thai chili
  • chili oil
  • rice vinegar
  • sesame oil

Cucumber salad

  • cucumber
  • kohlrabi
  • garlic
  • rice vinegar
  • Thai chili
  • sesame oil
  • lite salt

Preparation

  1. Mix the shrimp dumpling ingredients to prepare the filling.

  2. Assemble the dumplings by wrapping the filling in dumpling wrappers.

  3. Combine the dumpling salsa ingredients in a bowl.

  4. Slice the cucumber and kohlrabi, then mix with the cucumber salad ingredients.

  5. Warm cooking oil in a non-stick pan, add the dumplings, pour in 3-4 ounces of water, cover with lid, reduce heat to medium-low (around 3-4 on electric stove), and cook for 12-14 minutes.
