Teriyaki Tofu Waffle Fries

Ingredients

  • 400g extra-firm tofu
  • 3 cloves garlic
  • 1 inch piece of ginger
  • 1 spring onion
  • 2 heaped tbsp teriyaki sauce
  • 2 tbsp water
  • 1 tbsp soy sauce
  • 0.5 tbsp rice vinegar
  • 1-2 tsp chilli flakes
  • Sesame oil
  • Sesame seeds to serve

Preparation

  1. Preheat the waffle machine and cook the tofu until golden-brown, about 10-20 minutes depending on the tofu and machine.

  2. In the meantime, mix together the teriyaki sauce, water, soy sauce, rice vinegar, and chili flakes.

  3. Once the tofu is ready, cut each waffle into 3 chunky fries.

  4. Heat a splash of sesame oil in a frying pan over medium-high heat and fry the garlic, ginger, and white parts of the spring onion for one minute until fragrant.

  5. Pour in the sauce mixture and simmer for one to two minutes until thickened and sticky.

  6. Toss the tofu waffle fries in the sauce until well coated, then serve topped with the green parts of the spring onion and sesame seeds.
