Steamed Chicken and Shrimp Dim Sum

Ingredients

  • 25 wonton wrappers
  • 250g minced chicken
  • 250g minced peeled shrimp
  • 1 jicama or chayote, diced
  • 1 large carrot, diced
  • 100g tapioca flour or sago flour
  • 1 chicken egg
  • 1 green onion
  • 3 shallots, minced
  • 5 garlic cloves, minced
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 tablespoon soy sauce
  • 2 tablespoons sesame oil
  • 1 carrot, grated for topping

Preparation

  1. Mix the chicken, shrimp, jicama or chayote, carrot, shallots, and garlic.

  2. Add tapioca flour and mix well.

  3. Add the egg and mix well.

  4. Add the remaining seasonings: sugar, salt, pepper, soy sauce, sesame oil, and mix well. If the mixture is too soft, add a little more tapioca flour.

  5. Take a wonton wrapper and add a full spoonful of the mixture.

  6. Fold the sides while pleating and place in a steamer oiled with vegetable oil or in oiled muffin cups.

  7. Add grated carrot topping.

  8. Steam for 30 minutes on medium heat until cooked.

  9. Serve with chili sauce.
