Dan Dan Noodles

Ingredients

  • sesame oil for frying
  • 120g mushrooms of choice
  • noodles (ready to wok or boiled)
  • mince (e.g., Richmond)
  • 3 cloves of garlic
  • 1/2 inch piece of ginger

Sauce

  • 2 tbsp tahini
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • splash of sesame oil
  • 1 tsp brown sugar
  • chilli flakes

Preparation

  1. Chop the mushrooms finely and fry in sesame oil, then add the mince and continue frying at medium heat until crispy, about 8-10 minutes.

  2. Mix all the sauce ingredients, finely chopping the garlic and ginger, and loosen with water as needed.

  3. Add half of the sauce to the frying pan and stir for a couple of minutes.

  4. Add the noodles and the remaining sauce, then cook on low heat for a few minutes, adding more water if necessary.

Serving suggestions

  1. Serve with spring onion, sesame seeds, and chilli oil.
