Dan Dan Noodles
Ingredients
- sesame oil for frying
- 120g mushrooms of choice
- noodles (ready to wok or boiled)
- mince (e.g., Richmond)
- 3 cloves of garlic
- 1/2 inch piece of ginger
Sauce
- 2 tbsp tahini
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- splash of sesame oil
- 1 tsp brown sugar
- chilli flakes
Preparation
Chop the mushrooms finely and fry in sesame oil, then add the mince and continue frying at medium heat until crispy, about 8-10 minutes.
Mix all the sauce ingredients, finely chopping the garlic and ginger, and loosen with water as needed.
Add half of the sauce to the frying pan and stir for a couple of minutes.
Add the noodles and the remaining sauce, then cook on low heat for a few minutes, adding more water if necessary.
Serving suggestions
Serve with spring onion, sesame seeds, and chilli oil.
