Festive Christmas Salad Wreath Creation
Ingredients
- Seeds of 3/4 of an organic pomegranate fruit
- 1 packed of Absolute Organic Feta or Goat Cheese
- 300g organic rocket or mixed leaves washed
- 60g Absolute Organic Walnuts
Dressing
- 1/4 cup of Absolute Organic Maple Syrup
- 1/2 cup of Absolute Organic Balsamic Vinegar
- 2 teaspoons of Absolute Organic French Mustard
- 1/2 teaspoon of salt
- 1/2 teaspoon of Absolute Organic Ground Black Peppercorn
- 1 cup of Absolute Organic Olive Oil
Preparation
Salad set-up
Crumble the feta in a small bowl.
In another bowl, remove the seeds from the pomegranate.
In a large bowl, toss half of the salad ingredients, leaving the other half to decorate the top of the wreath.
Using a large rounded tray, spread the mixture around the corners, making the first layer of salad.
Add to the top the other half of the rocket leaves, pomegranate seeds, cheese and walnuts, hand placing each ingredient so the wreath looks balanced with similar quantities all around it.
Dressing Preparation
Place all ingredients except the olive oil into a blender.
Pulse to combine.
Slowly add the olive oil to the mixture with the motor running.
Pour the dressing in a rounded bowl and place it in the middle of the salad.
Tips
Always use Organic green leaves instead of conventional, as this type of food is always on the list with the most pesticides.
You can use other ingredients to decorate such as sliced star fruit, beetroot and green/black olives.
