Hearty Quinoa and Kale Soup

Ingredients

  • 75g quinoa
  • 1 can of cannellini beans
  • 2 large carrots
  • 3 celery sticks
  • 1 white onion
  • 2 roma tomatoes
  • 3 cloves of garlic
  • 1 tsp chilli flakes
  • 100g kale
  • 2 litres veg stock
  • 1 tbsp olive oil
  • Salt & pepper

Preparation

  1. Finely dice the onion and chop the carrot, tomatoes and celery into small cubes.

  2. Heat a large saucepan and then add the olive oil.

  3. Start to sauté the onions lightly for about 5 minutes, you do not want them to brown.

  4. Next add the carrot, celery, chilli flakes and grate in the garlic.

  5. Sauté for a further 3-4 minutes and then add the tomatoes.

  6. Once the tomatoes are soft and mushy add in the quinoa and cannellini beans and stir so everything gets coated.

  7. Pour in the stock, bring to a boil and then reduce heat and simmer with the lid on for 30 minutes.

  8. After 30 minutes stir in the kale, season with salt and pepper and serve.
