Peanut Butter and Banana Bars

Ingredients

  • 3 very ripe bananas
  • 1 cup peanut butter
  • 1/4 cup maple or agave syrup
  • 2 cups old-fashioned oats
  • 1 cup sliced almonds or other nut or seed combination
  • 1 tsp cinnamon (optional)
  • 1 tsp vanilla extract (optional)

Preparation

  1. Using a hand or standing mixer, mix the bananas, peanut butter, syrup, cinnamon (optional), and vanilla extract (optional) until very smooth.

  2. Add oats and almonds and mix until combined.

  3. Turn out onto a parchment covered baking dish (about 9x9 inches). Press and flatten with a spatula until evenly distributed.

  4. Bake at 350 degrees for 30 minutes, or until golden brown on edges.

  5. Allow to cool completely before cutting bars.

Storage tips

  1. Store at room temperature for a week or freeze for up to 6 months in an airtight container.
