Chocolate Walnut Banana Bread Breakfast Cookies

Ingredients

  • 1.5 cups plus 2 heaping Tbsp old-fashioned rolled oats (large flake oats)
  • 3 very ripe bananas, mashed
  • 1/2 cup of mini chocolate chips (I use DF ones)
  • 1/3 cup of crumbled walnuts (or pecans)
  • 3 Tbsp of peanut or almond butter
  • 1-2 Tbsp of maple syrup or honey (optional)
  • 1 Tbsp of pure vanilla extract (optional)

Preparation

  1. Preheat your oven to 350F and line a baking tray with parchment paper.

  2. Mash your bananas in a bowl.

  3. Add the rest of the ingredients to the bowl and mix.

  4. Shape into mini slider patties and flatten them out slightly; these don’t rise or expand (no baking powder or soda).

  5. Bake for ~13 mins or until edges are crispy and golden brown.

  6. Allow them to cool a bit and harden; best enjoyed warm.

  7. Store in a Tupperware or glass jar inside your fridge or at room temp. Enjoy them within 3 days.
