Refreshing Vegan Mango Salad

Ingredients

  • 1 large mango
  • 2 cucumbers
  • 1 red capsicum
  • 1/2 small red onion
  • 1 small bunch chives
  • 150g spinach

Dressing

  • 1/4 mango
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon salt
  • 4 slices jalapeño
  • 1 tablespoon maple syrup
  • 1/2 lime

Preparation

  1. Cut the mango, cucumbers, red capsicum, red onion, chives, and spinach.

  2. Blend the dressing ingredients: 1/4 mango, extra virgin olive oil, salt, jalapeño slices, maple syrup, and lime juice from 1/2 lime.

  3. Combine the cut salad ingredients with the dressing and mix well.
