Refreshing Vegan Mango Salad
Ingredients
- 1 large mango
- 2 cucumbers
- 1 red capsicum
- 1/2 small red onion
- 1 small bunch chives
- 150g spinach
Dressing
- 1/4 mango
- 1/3 cup extra virgin olive oil
- 1 teaspoon salt
- 4 slices jalapeño
- 1 tablespoon maple syrup
- 1/2 lime
Preparation
Cut the mango, cucumbers, red capsicum, red onion, chives, and spinach.
Blend the dressing ingredients: 1/4 mango, extra virgin olive oil, salt, jalapeño slices, maple syrup, and lime juice from 1/2 lime.
Combine the cut salad ingredients with the dressing and mix well.
