Roasted Duck Fat Tarragon Potatoes

Ingredients

  • 1/2 cup duck fat
  • 2kg kipfler potatoes, peeled and halved
  • 4 sprigs tarragon
  • Salt and pepper

Preparation

  1. Preheat the oven to 200 degrees Celsius

  2. Place 1/2 cup duck fat in a large, lined roasting tray and put it in the oven for 5 minutes.

  3. Add 2kg kipfler potatoes, peeled and halved, 4 sprigs tarragon, and salt and pepper.

  4. Cook for 1 hour.

  5. Sprinkle with extra tarragon and salt and pepper when ready.
