Roasted Duck Fat Tarragon Potatoes
Ingredients
- 1/2 cup duck fat
- 2kg kipfler potatoes, peeled and halved
- 4 sprigs tarragon
- Salt and pepper
Preparation
Preheat the oven to 200 degrees Celsius
Place 1/2 cup duck fat in a large, lined roasting tray and put it in the oven for 5 minutes.
Add 2kg kipfler potatoes, peeled and halved, 4 sprigs tarragon, and salt and pepper.
Cook for 1 hour.
Sprinkle with extra tarragon and salt and pepper when ready.
