Sweet Potato High-Protein Pizza Crust
Ingredients
- 3 small sweet potatoes, peeled and chopped
- 1 can white beans, rinsed
- 1 tablespoon tahini
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 tablespoon olive oil
- 3/4 cup cassava flour
Preparation
Preheat oven to 400 degrees Fahrenheit.
Steam or boil the sweet potatoes until fork tender. Drain and add to a food processor with the white beans, tahini, garlic powder, salt, and olive oil. Process on low until totally smooth like hummus.
Add the mixture to a bowl and slowly combine the cassava flour, 1/4 cup at a time, until well combined.
Push out the dough onto a round pizza pan and bake for 15 minutes. Top with desired toppings and bake for another 30 minutes.
