Roasted Grilled Vegetable Sandwich
Ingredients
- Eggplant
- Zucchini
- Mushrooms
- Bell peppers
- Salt
- Black pepper
- Garlic
- Olive oil
- Bread
- Hummus
- Mustard
Preparation
Cut the vegetables into thin slices.
Preheat the oven to 200°C
Place the vegetables on baking paper and season with black pepper, salt, and garlic.
Drizzle with a little olive oil and roast in the oven until brown and soft.
Slice the bread and spread hummus on the bottom slice.
Add the roasted vegetables and top with mustard.
