Roasted Grilled Vegetable Sandwich

Ingredients

  • Eggplant
  • Zucchini
  • Mushrooms
  • Bell peppers
  • Salt
  • Black pepper
  • Garlic
  • Olive oil
  • Bread
  • Hummus
  • Mustard

Preparation

  1. Cut the vegetables into thin slices.

  2. Preheat the oven to 200°C

  3. Place the vegetables on baking paper and season with black pepper, salt, and garlic.

  4. Drizzle with a little olive oil and roast in the oven until brown and soft.

  5. Slice the bread and spread hummus on the bottom slice.

  6. Add the roasted vegetables and top with mustard.
