Savory Oats with Spinach and Chickpeas

Ingredients

  • 1 cup oats
  • 1 cup oat milk
  • fresh spinach
  • garlic
  • chickpeas
  • balsamic truffle
  • olive oil
  • nutritional yeast
  • broccoli
  • cauliflower
  • green peas
  • seitan
  • avocado
  • hemp seeds
  • sesame seeds

Preparation

  1. Sauté fresh spinach with garlic until ready.

  2. Bake chickpeas at 400°F (200°C) for 30 minutes.

  3. Mix baked chickpeas with balsamic truffle, olive oil, and nutritional yeast.

  4. Combine oats, oat milk, and the sautéed spinach in a pot. Stir over medium heat until creamy.

  5. Prepare vegetables including broccoli, cauliflower, and green peas.

  6. Sauté seitan with preferred seasonings.

  7. Slice avocado.

  8. Assemble the savory oats and top with the chickpea mixture, vegetables, seitan, sliced avocado, hemp seeds, and sesame seeds.
