Vegan Omelette with Mushrooms Avocado and Tomato

Ingredients

  • 1/4 cup chickpea flour (gram flour)
  • 1/3 cup water
  • 1 tbsp nutritional yeast
  • 1/2 tsp paprika powder
  • 1/2 tsp black salt or Himalayan or sea salt
  • 2 tbsp olive oil
  • 1 handful mushrooms
  • 1/2 tsp chopped garlic
  • 1/2 avocado
  • 1/2 small tomato (3-4 slices)

Preparation

  1. Whisk the flour with water, paprika and salt.

  2. Heat 1 tablespoon olive oil in a frying pan.

  3. Pour the batter and layer it thinly on low heat.

  4. Meanwhile, griddle some mushrooms in olive oil and garlic.

  5. Flip your omelette.

  6. Add your fillings and enjoy.
