Easy Vegan Omelette with Mushrooms and Spinach

Ingredients

  • 30g gram flour
  • 1 tablespoon nutritional yeast
  • black eggy salt or normal salt
  • 78g water
  • mushrooms
  • spinach
  • cheese

Preparation

  1. Mix 30g gram flour, 1 tablespoon nutritional yeast, black eggy salt (or normal salt), and 78g water, then whisk it.

  2. In a separate pan, cook mushrooms and spinach.

  3. Mix the cooked vegetables back into the batter and add to a pan on low heat.

  4. Cook until it looks done, then cover with a lid to cook the top.

  5. Add cheese and melt it.
