Simple Breakfast with Egg, Sweet Potato, and Avocado

Ingredients

  • 1 egg
  • ghee (from Fourth & Heart)
  • red pepper flakes
  • 1 sweet potato
  • 1/2 avocado

Preparation

  1. Bake the sweet potato at 400°F for 45 minutes, then leave in the oven for another 45 minutes with the oven off.

  2. Fry 1 egg in ghee.

  3. Top the fried egg with red pepper flakes.

  4. Cut up 1/2 avocado.

  5. Assemble the meal and enjoy, with the sweet potato served cold if preferred.
