Sweet Potato Gnocchi
Ingredients
- 1 sweet potato
- 3/4 cup flour
Preparation
That's it for the ingredients
Just bake or microwave your pierced sweet potato until the center is soft. Scoop out the orangey goodness and mash well or use a ricer
Mix in flour and add a splash of dairy free milk if seems too dry
You can also add in a flavoring that will complement your sauce or topping (Italian seasoning, nutmeg, fresh ground pepper, cinnamon, etc)
Roll into a log, cut into squares, roll on a butter board or fork
Why? Those grooves help trap your yummy sauce)
Boil in salted water for 1-2 min until the gnocchi floats. Scoop them out and plate and enjoy right away
I topped mine with olive oil, shallots, and fresh rosemary
