Sweet Potato Tortillas
Ingredients
- 1 large sweet potato
- 120g / 1 cup wholegrain spelt flour (or sub for cassava/chickpea flour)
- 1 tsp salt
Preparation
Peel and cut your sweet potato into small cubes
Steam them until super soft
Then puree until smooth
Add your flour and salt and kneed until a firm dough forms
It should not be sticky at all
Add more flour if needed
Cut your dough into six pieces
On a flowered surface roll each piece into about 1/4-1/2 cm thick tortillas
Grease a pan with a little bit of oil and bake the tortillas for 2-3 minutes on each side

Serve with your favorite toppings
