Tempeh Taco Filling with Spices and Vegetables
Ingredients
- 1/2 yellow onion
- 2 cloves garlic, minced
- 1 block tempeh
- 1 cup mushroom or vegetable broth
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 tsp chipotle powder
- 1 tbsp soy sauce
- Extra broth for deglazing
- Salt to taste
Taco components
- corn tortillas
- onions and peppers
- avocado
- corn
- greens
- fresh lime juice
Preparation
Add diced onion to a pan and begin to cook.
Add in minced garlic and allow to cook until onions are softened using a splash of broth to prevent sticking.
Crumble in tempeh and mix to combine.
Add in cup of broth, all the remaining seasonings and some soy sauce.
Allow broth to come to a simmer and stir to prevent sticking.
Once most of the liquid is cooked off, add salt to taste, stir and set aside to use in tacos.
Assembly
Load up your tacos as you want.
Use corn tortillas stuffed with sautéed onions and peppers, avocado, corn, greens and fresh lime juice as an example.
