Tempeh Taco Meat

Ingredients

  • 1 pack of tj’s organic 3-grain tempeh
  • 1/2 cup vegetable broth
  • 3 tbsp tj’s soyrizo
  • 1 can of black beans
  • 1/4 medium onion
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • pinch of cayenne
  • salt and pepper to taste
  • 1/2 cup plain vegan yogurt
  • 2 small chipotles in adobo sauce
  • 1 tbsp lemon or lime juice
  • salt and pepper to taste

Preparation

  1. Turn large pan on medium heat. Open pack of tempeh and crumble it into small pieces. Dice onion and open can of black beans, drain and rinse

  2. Add large splash of vegetable broth to pan and then add your tempeh and onions. Cook with vegetable broth for about 10 minutes. Continue to add splashes of broth

  3. Add 3 Tbsp Soyrizo and black beans along with all the seasonings. Simmer for 10 more minutes adding vegetable broth or oil as necessary

  4. While it’s simmering blend your c creamy chipotle sauce ingredients together and set aside

  5. Once tempeh is done cooking, take off heat and serve on top of tortillas with creamy chipotle sauce and guac
