Vegan King Oyster Mushroom Scallops

Ingredients

  • 2 large King Oyster Mushrooms
  • 1/4 cup Vegetable Broth
  • 2 Tbsp Tamari or Soy Sauce (low sodium)
  • 1 tsp Garlic, minced
  • 1 tbsp Lemon Juice
  • Salt & Pepper to taste

Preparation

  1. Slice king oyster mushrooms into thick 1/4 inch slices to mimic scallops.

  2. Whisk all your other ingredients together in a shallow bowl.

  3. Add your king oyster mushrooms to the bowl and let marinate for at least 1 hour or for 3 hours for best results.

  4. Turn pan on medium heat and add mushrooms to the pan. Cook by adding splashes of the marinade to the pan and continue to deglaze them by adding more when needed.

  5. Cook for 5 minutes on each side or until golden brown.

  6. Serve with a salad, bowl of rice or mashed potatoes and enjoy!

Notes

  1. King oyster mushrooms are similar to scallops and have a mild taste, making them good at absorbing added flavors.
