Vegan Cheesy Roasted Asparagus

Ingredients

  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 pound asparagus, ends trimmed
  • 1/4 cup whole-wheat panko breadcrumbs
  • 1/4 cup nutritional yeast, plus more for serving
  • Flaky sea salt, for serving

Preparation

  1. Preheat the oven to 425 degrees F.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt and pepper.

  3. Toss with the asparagus and arrange in a single layer on a parchment-paper-lined sheet pan.

  4. Combine the nutritional yeast and breadcrumbs and sprinkle over the asparagus.

  5. Roast for 8 minutes until the asparagus turns bright green and the cheese has melted.

  6. Season with flaky sea salt and top with nutritional yeast before serving.
