Vegan Cheesy Scramble with Veggies and Beans

Ingredients

  • 2 slices sprouted grain toast
  • 1 avocado
  • butternut squash
  • broccoli
  • cauliflower
  • 1/2 cup black beans
  • 2 tablespoons Trader Joe's cashew fiesta cheese dip

Preparation

  1. Mash avocado and top the sprouted grain toast.

  2. Crisp butternut squash in air fryer at 380°F for 10 minutes.

  3. Steam broccoli and cauliflower until softened.

  4. Add black beans to the steamed vegetables.

  5. Melt cashew fiesta cheese dip and mix into the vegetable and bean mixture to create a sauce.
