Healthy Plant Based Nachos

Ingredients

  • fav tortilla chips
  • black beans (no salt added can)
  • frozen corn
  • bell pepper - i used yellow
  • avocado
  • pico de gallo (roma tomatoes, red onion, garlic, basil, add olive oil /salt)
  • lettuce of choice - i used green leaf
  • hot sauce - i used siete original

Preparation

  1. Preheat oven to 400f

  2. Rinse and wash black beans, set aside

  3. Make pico de gallo by finely chopping ingredients then set that aside

  4. Get a small baking dish, add a full layer of chips

  5. Add layer of black beans, corn & bell pepper

  6. Add another layer of chips

  7. Then add more black beans, corn & bell pepper

  8. Bake for 15 minutes till heat up beans and corn and chips

  9. Add the lettuce, avocado, pico, hot sauce and eat!! super simple to make and so good for ya!

  10. Extra: you can also make a plant based nacho cheese sauce & sour cream if you wanted to make it more saucy
