Refried Black Bean Tacos with Sweet Potato

Ingredients

  • 1 can black beans, rinsed and drained
  • 2 tbsp canned green chilies
  • 1 tbsp tomato paste
  • 1/4 red onion, diced
  • 3 cloves garlic
  • 1 tsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 cup veggie broth
  • Salt to taste
  • Blue corn tortillas
  • Greens of choice (e.g., spring mix)
  • Sweet potato
  • Frozen corn
  • Avocado
  • Hot sauce
  • Red pepper flakes
  • Spring onions

Preparation

  1. Add onions to a pan and sauté until softened, about 3 minutes.

  2. Add garlic, seasoning, tomato paste and beans and sauté until fragrant.

  3. Add in green chilies and veggie broth and bring to a simmer.

  4. Allow to simmer for 5 minutes and lightly mash the beans until thickened.

  5. Remove beans from stove and add salt and pepper to taste.

  6. Roast sweet potato in air fryer at 370F for 15 minutes, seasoned with smoked paprika, garlic powder, and soy sauce.

  7. Microwave frozen corn until heated.

  8. To assemble tacos, top blue corn tortillas with greens, refried beans, roasted sweet potato, microwaved corn, and avocado slices.

  9. Add hot sauce, red pepper flakes, and spring onions to top it off.
