Sauteed Pigeon Peas with Vegetables

Ingredients

  • 1 can pigeon peas
  • 1/2 red onion
  • 1 tbsp minced garlic
  • 1 green bell pepper
  • 1 tsp tamari
  • 1 tsp adobo
  • 1/2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp hot sauce
  • 1/4 cup veggie broth

Preparation

  1. In a pan sauté onion until softened.

  2. Add in bell pepper and garlic, cook until garlic is fragrant, about 2 minutes.

  3. Add in beans, remaining seasonings, and veggie broth.

  4. Simmer and stir until veggie broth is absorbed, about 10 minutes.

  5. Adjust seasonings to your preference and serve as desired.
