Sauteed Pigeon Peas with Vegetables
Ingredients
- 1 can pigeon peas
- 1/2 red onion
- 1 tbsp minced garlic
- 1 green bell pepper
- 1 tsp tamari
- 1 tsp adobo
- 1/2 tsp smoked paprika
- 1 tsp oregano
- 1 tsp hot sauce
- 1/4 cup veggie broth
Preparation
In a pan sauté onion until softened.
Add in bell pepper and garlic, cook until garlic is fragrant, about 2 minutes.
Add in beans, remaining seasonings, and veggie broth.
Simmer and stir until veggie broth is absorbed, about 10 minutes.
Adjust seasonings to your preference and serve as desired.
