Quick Pigeon Peas with Vegetables and Spices
Ingredients
- 1 can of gandules (pigeon peas), drained
- 1/2 red onion, diced
- 1/2 green pepper, diced
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- 1/4 tsp smoked paprika
- 1/2 tsp @eatloisa sazón
- 2 tsp soy sauce
- 1/4 cup water or vegetable broth
- One handful of cilantro
- Salt to taste
Preparation
Add onion and pepper to a pan and sauté until onions are softened.
Lower heat to low-medium and add in seasonings and sauté until fragrant.
Add beans, soy sauce, water and cilantro.
Stir to combine and allow beans to heat through.
With the back of your spoon, lightly mash a small portion of the beans to help thicken and absorb some of the water.
Salt to taste and serve.
