Smoked White Bean Stew

Ingredients

  • 2 cups cooked great northern beans
  • 1 15 oz can fire roasted tomatoes
  • 1/2 red onion
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons red pepper flakes (optional)
  • 1 cup water
  • 2 handfuls fresh spinach
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation

  1. Add onion to a pan set to medium heat and cook until softened, about 2-3 minutes.

  2. Add the remaining ingredients except spinach and lemon and stir to combine.

  3. Bring to a simmer and allow to cook for 15 minutes or until thickened.

  4. Turn off heat and add spinach.

  5. Allow spinach to wilt from heat of the stew and gently fold it in.

  6. Add salt and pepper to taste and serve.

  7. Squeeze fresh lemon juice over top.
