Simple Vegan Stewed Pinto Beans

Ingredients

  • 2 cans pinto beans, rinsed and drained
  • 1 teaspoon sazon (vegetable based)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 red onion, diced
  • 1 can rotel (or diced tomatoes with green chili peppers)
  • 2 teaspoons capers (optional)
  • 2 cups veggie broth

Preparation

  1. Sauté diced onion in a pot with oil until softened

  2. Add sazon, smoked paprika, garlic powder, and oregano; cook for 1 minute to release flavors

  3. Stir in rinsed and drained pinto beans, rotel, capers if using, and veggie broth

  4. Bring mixture to a simmer and cook for 15-20 minutes until beans are tender and flavors meld

  5. Serve the stewed beans with vegetables, rice, and avocado as desired
