Smoked White Bean Stew

Ingredients

  • 2 cups cooked great northern beans
  • 1 15oz can of fire roasted tomatoes
  • 1/2 red onion, sliced into strips
  • 1 tbsp tomato paste
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 2 tsp red pepper flakes (optional)
  • 1 cup of water
  • 2 handfuls of fresh spinach
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation

  1. Add onion to a pan set to medium heat and cook until softened, about 2-3 minutes.

  2. Add remaining ingredients except spinach and lemon and stir to combine.

  3. Bring to a simmer and allow to cook for 15 minutes or until thickened.

  4. Turn off heat and add spinach.

  5. Allow spinach to wilt from heat of the stew and gently fold it in.

  6. Add salt and pepper to taste and serve with a squeeze of fresh lemon juice over top.
