White Bean Stew
Ingredients
- 1 small red onion, roughly chopped
- 1 15 oz can diced fire roasted tomatoes
- 1 inch ginger, minced
- 3 cloves garlic, minced
- 2 cans white beans, rinsed and drained
- 1/3 cup red lentils
- 1 small sweet potato, diced into small cubes
- 2 bay leaves
- 2 tsp berbere seasoning
- 2 tsp dry basil
- 1 tsp smoked paprika
- 2 cup veggie broth
Preparation
Can be made in the instapot
Dump all ingredients in and seal pressure cooker
Set to manual, high pressure for 15 minutes
You can cook on the stove top as follows
Cook onion in large pot and sauté until softened
Add garlic and ginger and allow to cook and become fragrant
Add all seasonings plus tomato sauce and cook for 3-4 minutes until fragrant
Add remaining ingredients and bring to a boil then reduce to a simmer
Cover pot with a lid and allow to cook for 15 minutes
Remove lid and continue to cook on low heat for another 5-10 minutes until red lentils are completely cooked
Stir and serve
