Hearty White Bean Stew with Berbere Seasoning
Ingredients
- 1 small red onion, roughly chopped
- 1 15 oz can diced fire roasted tomatoes
- 1 inch ginger, minced
- 3 cloves garlic, minced
- 1 can white beans, rinsed and drained
- 1/3 cup red lentils
- 1 small sweet potato, diced into small cubes
- 2 bay leaves
- 2 tsp berbere seasoning
- 2 tsp dry basil
- 1 tsp smoked paprika
- 2 cup veggie broth
Preparation
Berbere seasoning adds incredible flavor; look for it in the spice aisle.
Red lentils blend into the stew to thicken it and add nutrition like iron and protein.
For stove top: Cook onion in a large pot and sauté until softened. Add garlic and ginger and cook until fragrant. Add all seasonings plus tomato sauce and cook for 3-4 minutes until fragrant. Add remaining ingredients and bring to a boil, then reduce to a simmer. Cover pot with a lid and cook for 15 minutes. Remove lid and continue to cook on low heat for another 5-10 minutes until red lentils are completely cooked. Stir and serve.
For Instapot: Dump all ingredients into the pressure cooker and seal. Set to manual, high pressure for 15 minutes.
