Savory Chickpea and Kale Stirfry Breakfast
Ingredients
- 1 cup chickpeas, rinsed and drained
- 2 tsp tamari
- 1 tsp minced garlic
- Pinch of turmeric
- Pinch of smoked paprika
- 5-6 halved cherry tomatoes
- 1/4 small red onion, minced
- 1/2 tsp Sriracha
- Pinch of nutritional yeast, optional
Preparation
Add onion and tomato and sauté for 2 minutes.
Add in garlic and sauté until fragrant.
Add in chickpeas remaining spices and sauté for 2 minutes.
Add tamari, Sriracha and nutritional yeast and allow chickpeas to fully absorb liquid then remove from heat.
Add salt and pepper to taste.
Topped my mix with a little tahini.
