Savory Chickpea and Kale Stirfry Breakfast

Ingredients

  • 1 cup chickpeas, rinsed and drained
  • 2 tsp tamari
  • 1 tsp minced garlic
  • Pinch of turmeric
  • Pinch of smoked paprika
  • 5-6 halved cherry tomatoes
  • 1/4 small red onion, minced
  • 1/2 tsp Sriracha
  • Pinch of nutritional yeast, optional

Preparation

  1. Add onion and tomato and sauté for 2 minutes.

  2. Add in garlic and sauté until fragrant.

  3. Add in chickpeas remaining spices and sauté for 2 minutes.

  4. Add tamari, Sriracha and nutritional yeast and allow chickpeas to fully absorb liquid then remove from heat.

  5. Add salt and pepper to taste.

  6. Topped my mix with a little tahini.
