Chickpea Veggie Stir Fry Nori Wraps

Ingredients

  • frozen broccoli
  • red onion, chopped into strips
  • brussels sprouts, chopped into halves (or quarters if they’re XL)
  • turmeric, black pepper, mustard powder, and garlic powder, to taste
  • chickpeas
  • 2 nori sheets

Preparation

  1. To make the veggie stir fry, add the onion, brussels, and frozen broccoli to a pan over medium-high heat

  2. After about 5 minutes, add about 1/4 cup water and stir, getting any small bits that may have started sticking to the pan

  3. Continue stirring occasionally and adding water little by little for about 10-15 more minutes, until the veg is cooked to your liking. You can also use veggie stock instead of water for a bit more flavor

  4. Once the veggies are cooked, mix in the spices then add to a bowl with the chickpeas

  5. Use kitchen scissors or fold and tear with your hands to cut each of the nori sheets into 4 smaller pieces

  6. To eat, add any condiments you like, make little wraps with the veg and chickpeas in the nori, and eat them
