Scrambled Tofu with Vegetables and Spices

Ingredients

  • 1/2 an onion
  • 1 garlic clove
  • 1/3 block of tofu
  • 4 cherry tomatoes
  • Handful of spinach
  • Turmeric
  • Curry powder
  • Cumin
  • Dash of soy sauce or tamari
  • Nutritional yeast (optional)
  • Olive oil
  • Fresh parsley

Preparation

  1. Add olive oil to the pan and heat it.

  2. Add onion and garlic, and cook until onion is translucent.

  3. Add turmeric, curry powder, and cumin.

  4. Once the spices are fragrant, add the tomatoes.

  5. Crumble the tofu into the pan and cook.

  6. Add tamari, nutritional yeast, and parsley.

  7. After a few minutes, add spinach and cook until wilted.

  8. Serve with toast and vegan butter, or with hummus and avocado.
