Smoky Pinto Beans

Ingredients

  • 1 can pinto beans, rinsed and drained
  • 1/4 medium onion, diced
  • 8 bell mushrooms, sliced
  • 1 tsp adobo seasoning
  • 1/2 tsp smoked paprika
  • 3 cloves garlic, minced
  • 1/2 cup veggie broth
  • 1/2 cup steamed kabocha squash (optional—just threw this in because I had to finish it before moving)

Preparation

  1. In a medium pan, cook down mushroom and onion, about 3 minutes

  2. Add in garlic, beans and remaining seasonings

  3. Stir to combine and add in veggie broth

  4. With back of spoon, lightly mash up half of the whole beans in the pan

  5. Stir mixture completely and remove from heat to thicken

  6. Serve as desired

  7. Makes 2 generous servings
