Easy Vegan Refried Black Beans

Ingredients

  • 1 can black beans (no added sodium)
  • 1 teaspoon ground cumin
  • 3 garlic cloves
  • 1 small red onion
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon salt or to taste
  • 1 cup vegetable broth and more for sauteeing
  • Fresh lime or lemon to squeeze over top (optional)

Preparation

  1. Set pan to medium-high heat, once heated add onions and 1 tablespoon of vegetable broth. Cook until translucent, adding a little broth as it evaporates to prevent sticking.

  2. Add all other spices and cook until fragrant, about 1 minute.

  3. Add black beans and 1 cup of broth to the pan, simmer for roughly 10 minutes, then mash the beans and serve.
