Easy Vegan Refried Black Beans
Ingredients
- 1 can black beans (no added sodium)
- 1 teaspoon ground cumin
- 3 garlic cloves
- 1 small red onion
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon paprika
- 1 teaspoon oregano
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt or to taste
- 1 cup vegetable broth and more for sauteeing
- Fresh lime or lemon to squeeze over top (optional)
Preparation
Set pan to medium-high heat, once heated add onions and 1 tablespoon of vegetable broth. Cook until translucent, adding a little broth as it evaporates to prevent sticking.
Add all other spices and cook until fragrant, about 1 minute.
Add black beans and 1 cup of broth to the pan, simmer for roughly 10 minutes, then mash the beans and serve.
