Vegan Black Bean Wild Rice Burgers
Ingredients
- 1-15oz can black beans or 1-3/4 cups cooked black beans
- 1 yellow onion
- 1 large carrot
- 4 garlic cloves
- 1/4-1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1 tablespoon tahini
- 1 cup cooked brown rice
- 1 cup cooked wild rice
- Salt to taste
- Vegetable broth or olive oil
- Bean cooking liquid (optional)
Preparation
Bake the black beans spread out on a baking sheet at 375°F for 15-20 minutes until just crispy.
Sauté the yellow onion and large carrot in a little vegetable broth or olive oil until the carrots are just tender.
Add the minced garlic cloves, 1/4-1/2 teaspoon chili powder, 1/2 teaspoon paprika, 1/4 teaspoon cumin, 1/2 teaspoon oregano, and 1/4 teaspoon black pepper, then sauté for another minute.
Transfer the mixture to a food processor along with the roasted black beans and 1 tablespoon tahini, and pulse until a dough-like consistency is achieved.
Add 1 cup cooked brown rice and pulse a few more times.
Return the mixture to a large bowl and mix in 1 cup cooked wild rice.
Add salt to taste and let the mixture sit for at least 10 minutes before forming into patties.
Form the mixture into about 6 patties, adding a little bean cooking liquid if too dry.
Bake the patties on a lined baking sheet for 15-20 minutes until firm, then flip them.
Broil for another 5 minutes until slightly crispy.
