Kale and Black Bean Burrito Bowl
Ingredients
- brown rice (cooked)⠀
- kale⠀
- lime juice⠀
- olive oil⠀
- cumin⠀
- 2 cans black beans, rinsed and drained (or 4 cups cooked black beans)⠀
- 1 shallot, finely chopped (or 1/3 cup chopped red onion)⠀
- 3 cloves garlic, pressed or minced⠀
- 1/4 teaspoon chili powder⠀
- 1/4 teaspoon cayenne pepper (optional)⠀
Preparation
Begin by marinating your kale! Whisk together your lime juice and olive oil, followed by cumin as well as the optional jalapeño. Toss together. ⠀
Once finished, warm 1 tablespoon of olive oil, and add in your shallop and garlic for 2 minutes. Add in your beans, chilli powder, and cayenne pepper, and stir this together for 5-7 minutes.⠀
In a bowl, pair your rice with your kale salad, black beans, and top with avocado, salsa, and whatever you please!⠀
