Kale and Black Bean Burrito Bowl

Ingredients

  • brown rice (cooked)⠀
  • kale⠀
  • lime juice⠀
  • olive oil⠀
  • cumin⠀
  • 2 cans black beans, rinsed and drained (or 4 cups cooked black beans)⠀
  • 1 shallot, finely chopped (or 1/3 cup chopped red onion)⠀
  • 3 cloves garlic, pressed or minced⠀
  • 1/4 teaspoon chili powder⠀
  • 1/4 teaspoon cayenne pepper (optional)⠀

Preparation

  1. Begin by marinating your kale! Whisk together your lime juice and olive oil, followed by cumin as well as the optional jalapeño. Toss together. ⠀

  2. Once finished, warm 1 tablespoon of olive oil, and add in your shallop and garlic for 2 minutes. Add in your beans, chilli powder, and cayenne pepper, and stir this together for 5-7 minutes.⠀

  3. In a bowl, pair your rice with your kale salad, black beans, and top with avocado, salsa, and whatever you please!⠀
