Kale and Black Bean Burrito Bowl

Ingredients

  • Brown rice (cooked)
  • Kale
  • Lime juice
  • Olive oil
  • Cumin
  • 2 cans black beans, rinsed and drained (or 4 cups cooked black beans)
  • 1 shallot, finely chopped (or 1/3 cup chopped red onion)
  • 3 cloves garlic, pressed or minced
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)

Preparation

  1. Begin by marinating the kale by whisking together lime juice, olive oil, cumin, and optional jalapeño, then toss together.

  2. Once finished, warm 1 tablespoon of olive oil, add shallot and garlic, and cook for 2 minutes, then add beans, chili powder, and cayenne pepper, and stir for 5-7 minutes.

  3. In a bowl, pair the rice with the kale salad, black beans, and top with avocado, salsa, and whatever you please.
