Plant Based Nachos

Ingredients

  • thick tortilla chips
  • black beans
  • nacho cheese sauce
  • romaine lettuce
  • red onion
  • tomato
  • avocado
  • 1 cup cut up carrots about 2 long ones
  • 2 cups peeled potatoes or 1/4 of a cauliflower
  • 1/2 cups cashews
  • 1/2 cup water
  • 1/4 cup nutritional yeast
  • 3 tbsp u sweetened milk
  • 1/2 lemon juiced
  • 1 tsp salt
  • 1 tsp paprika if you want spice

Preparation

  1. Make nacho cheese sauce by boiling veggies till soft then adding all ingredients into high speed blender and blend till smooth

  2. Preheat oven to 425f

  3. In a baking dish layer chips with cheese and beans bake for 15 minutes

  4. While nachos are in oven chop up all the veggies

  5. Once it’s done add the fresh toppings and enjoy!
