Thai Red Curry Potato Wedges
Ingredients
- ingredients for red thai curry wedges:
- 2-3 washed potatoes
- 1/2 cup coconut milk ?
- 3 tbsp thai red curry paste ?
- 1 tsp chilli powder (optional)
- 1 tsp paprika (optional)
- Ingredients for easy guacamole:
- 1 ripe avocado
- Juice of 1/2 a lime ?
- Salt + pepper to taste
- Paprika to garnish
Preparation
Preheat oven to 200°C [390°F]
Wash potatoes thoroughly and roughly chop into wedges
Combine coconut milk + thai red curry paste well, then marinade the potatoes in the sauce for 5-10 minutes
Place the potato wedges onto a lined tray, sprinkle with chilli powder + paprika and bake for 45 minutes or until wedges are crisp & appear golden
Remove from the oven & allow to cool for 5-10 minutes before serving with fresh guacamole!
Mash avocado using a fork to desired consistency
Add lime juice + salt/pepper + paprika as you are mashing - and serve
