Thai Red Curry Potato Wedges

Ingredients

  • 2-3 washed potatoes⁠
  • 1/2 cup coconut milk ?⁠
  • 3 tbsp thai red curry paste ?⁠
  • 1 tsp chilli powder (optional)⁠
  • 1 tsp paprika (optional)⁠
  • Ingredients for easy guacamole:⁠
  • 1 ripe avocado⁠
  • Juice of 1/2 a lime ?⁠
  • Salt + pepper to taste⁠
  • Paprika to garnish⁠

Preparation

  1. Preheat oven to 200°C [390°F] ⁠

  2. Wash potatoes thoroughly and roughly chop into wedges⁠

  3. Combine coconut milk + thai red curry paste well, then marinade the potatoes in the sauce for 5-10 minutes⁠

  4. Place the potato wedges onto a lined tray, sprinkle with chilli powder + paprika and bake for 45 minutes or until wedges are crisp & appear golden⁠

  5. Remove from the oven & allow to cool for 5-10 minutes before serving with fresh guacamole!⁠

  6. Mash avocado using a fork to desired consistency ⁠

  7. Add lime juice + salt/pepper + paprika as you are mashing - and serve
