Avocado Pesto Pizza
Ingredients
- 1/2 cup extra virgin olive oil
- 1 cup basil leaves
- 1/2 cup washed spinach or washed kale
- 1/3 cup pumpkin shelled seeds
- juice of 1 lemon
- 1/3 cup nutritional yeast
Preparation
Blend the Pesto ingredients in a food processor until smooth. You will need 2 ripe avocados. Slice them, set aside and drizzle the sliced avocados with some lemon juice to prevent them from going brown
Spread the pizza dough about 12 inches in diameter and transfer it to a pizza pan lined with a parchment paper. Poke the dough around the center with fork so the center doesn’t rise while baking. Bake the crust for about 15 min or until golden brown and the bottom is crispy
Take the baked crust from the oven. Let it cool off for few min. Spread the pesto on the crust. Be generous. Top it with sliced avocado, add some arugula. Sprinkle it with some good sea salt and pepper
