Loaded Vegan Bowl with Pesto and Veggies
Ingredients
- peas pasta
- green pesto
- 1/2 avocado
Roasted vegetables
- mushrooms
- green asparagus
- broccoli
- tomatoes
Preparation
Roast the vegetables at 200°C for 20-25 minutes until tender
Cook the peas pasta according to package directions until al dente
Toss the cooked pasta with green pesto to coat evenly
Assemble all components in a bowl and add half an avocado, sliced
