Loaded Vegan Bowl with Pesto and Veggies

Ingredients

  • peas pasta
  • green pesto
  • 1/2 avocado

Roasted vegetables

  • mushrooms
  • green asparagus
  • broccoli
  • tomatoes

Preparation

  1. Roast the vegetables at 200°C for 20-25 minutes until tender

  2. Cook the peas pasta according to package directions until al dente

  3. Toss the cooked pasta with green pesto to coat evenly

  4. Assemble all components in a bowl and add half an avocado, sliced
