Vegan Quinoa Salad Bowl with Falafels

Ingredients

  • Quinoa
  • Chickpeas
  • Falafels
  • Avocado
  • Tomatoes
  • Spinach
  • Lettuce

Dressing

  • 1 tablespoon tahini
  • Juice of 1/2 lemon
  • 2-3 tablespoons water

Preparation

  1. Roast the chickpeas with salt and pepper until crispy

  2. Cook the quinoa according to package instructions

  3. Chop the avocado, tomatoes, spinach, and lettuce into bite-sized pieces

  4. Assemble the salad by combining quinoa, roasted chickpeas, falafels, chopped avocado, tomatoes, spinach, and lettuce in a bowl

Dressing

  1. In a small bowl, mix 1 tablespoon tahini with the juice of 1/2 lemon.

  2. Add 2-3 tablespoons water and stir until creamy.
