Vegan Quinoa Salad Bowl with Falafels
Ingredients
- Quinoa
- Chickpeas
- Falafels
- Avocado
- Tomatoes
- Spinach
- Lettuce
Dressing
- 1 tablespoon tahini
- Juice of 1/2 lemon
- 2-3 tablespoons water
Preparation
Roast the chickpeas with salt and pepper until crispy
Cook the quinoa according to package instructions
Chop the avocado, tomatoes, spinach, and lettuce into bite-sized pieces
Assemble the salad by combining quinoa, roasted chickpeas, falafels, chopped avocado, tomatoes, spinach, and lettuce in a bowl
Dressing
In a small bowl, mix 1 tablespoon tahini with the juice of 1/2 lemon.
Add 2-3 tablespoons water and stir until creamy.
