Simple and Delicious Buddha Bowl

Ingredients

  • peas pasta
  • green pesto
  • 1/2 avocado

Vegetables

  • mushrooms
  • green asparagus
  • broccoli
  • tomatoes

Preparation

  1. Roast the vegetables in the oven until tender

  2. Cook the peas pasta according to package directions

  3. Prepare the green pesto if it's homemade, or use store-bought

  4. Slice the avocado just before serving to prevent browning
