Red Curry Tempeh Bowl
Ingredients
- 4 oz tempeh
- 1/2 cup natural peanut butter (smooth)
- 1/4 cup tamari
- 1 tablespoon minced ginger
- 2 tablespoons minced garlic
- 1 teaspoon red curry paste
- 1 tablespoon lime juice
- 1/2 cup water
Bowl additions
- greens
- mushrooms
- edamame
- avocado
- lime
- rice
Preparation
Heat tempeh on both sides for about 2 minutes over medium heat in a pan until lightly golden.
Combine all ingredients in a bowl and whisk until smooth. Pour over the tempeh and let sauce absorb and slightly thicken.
In a bowl, serve with greens, mushrooms, edamame, avocado, lime and rice.
