Peanut Butter Satay Tofu Bowls

Ingredients

  • 3 tbsp runny peanut butter
  • 1 tbsp lime or lemon juice
  • 1 tbsp icing sugar
  • 1 tsp sriracha hot sauce
  • 1 tbsp tamari soy sauce
  • salt and pepper
  • 2 tbsp water
  • 200g tofu
  • olive or sesame oil
  • salad leaves
  • rice
  • mange tout or sugar snap peas
  • radish
  • cucumber
  • avocado
  • sesame seeds
  • fresh herbs
  • spring onion
  • lime wedges

Preparation

  1. This recipe serves 2.

  2. Stir together 3 tbsp runny peanut butter, 1 tbsp lime or lemon juice, 1 tbsp icing sugar, 1 tsp sriracha hot sauce, 1 tbsp tamari soy sauce, and salt and pepper, then stir in 2 tbsp water to thin the satay sauce.

  3. Toss 200g cubed tofu in 4 tbsp of the satay sauce and let rest for 10 minutes.

  4. Heat a drizzle of olive or sesame oil and fry the tofu cubes until golden and crisp, flipping over regularly.

  5. Fill a bowl with salad leaves, cooked rice, steamed mange tout or sugar snap peas, chopped radish, cucumber, and sliced avocado.

  6. Top with the crispy satay tofu and drizzle over the remaining peanut butter satay sauce.

  7. Sprinkle over sesame seeds, fresh herbs, spring onion, and lime wedges.
