Vegan Mac and Cheese Sandwich

Ingredients

  • 1 1/2 cups shredded vegan cheese
  • 1-2 cup plant milk
  • 1 T vegan butter
  • Garlic powder, stock powder, paprika, salt and pepper to taste
  • 1 tablespoon chopped parsley
  • 1 1/4 cup cooked macaroni
  • 6 slices bread
  • Extra vegan butter
  • Tomato sauce

Preparation

  1. Melt vegan butter in a saucepan over medium heat, then add plant milk and shredded vegan cheese, stirring until smooth and combined

  2. Season the cheese sauce with garlic powder, stock powder, paprika, salt, and pepper to taste

  3. Mix in the cooked macaroni and chopped parsley until evenly coated

  4. Butter one side of each bread slice with extra vegan butter

  5. Assemble sandwiches by placing a portion of the mac and cheese mixture between two bread slices, with buttered sides out

  6. Cook the sandwiches in a skillet over medium heat until golden brown on both sides

  7. Serve with tomato sauce for dipping
