Vegan Mac and Cheese Sandwich
Ingredients
- 1 1/2 cups shredded vegan cheese
- 1-2 cup plant milk
- 1 T vegan butter
- Garlic powder, stock powder, paprika, salt and pepper to taste
- 1 tablespoon chopped parsley
- 1 1/4 cup cooked macaroni
- 6 slices bread
- Extra vegan butter
- Tomato sauce
Preparation
Melt the vegan butter in a saucepan over medium heat. Add the plant milk and shredded vegan cheese, stirring until melted and smooth. Season with garlic powder, stock powder, paprika, salt, and pepper to taste.
Mix the cheese sauce with the cooked macaroni and chopped parsley.
Assemble the sandwiches by placing the mac and cheese mixture between slices of bread.
Butter the outer sides of the bread with extra vegan butter and cook in a skillet over medium heat until golden brown on both sides.
Serve the sandwiches with tomato sauce on the side.
