Vegan Mexican Jackfruit Tostadas
Ingredients
Tostadas
- 10-12 corn tortillas
- 1-2 tbsp avocado oil
- 1/2 tsp salt
Jackfruit
- 1 large can green jackfruit
- 1 tbsp soy sauce or tamari
- 1/2 tbsp maple syrup
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1 tbsp avocado oil
- Salt to taste
Toppings
- 1 1/2 cup “refried” beans
- 1/2 cup red pickled onions
- 1 cup shredded cabbage
- 3 tomatoes, sliced
- 2 avocados, sliced
- Fresh cilantro
- Vegan sour cream (optional)
- Tapatio or homemade salsa
Preparation
Fry corn tortillas in avocado oil until golden and crisp, or brush with oil and bake in the oven until crispy.
Drain and shred the jackfruit, then sauté in avocado oil with soy sauce, maple syrup, chili powder, garlic powder, and salt until tender and flavorful.
Heat the refried beans in a saucepan or microwave until warm.
Slice tomatoes and avocados, and prepare other toppings as needed.
Assemble the tostadas by spreading refried beans on each tortilla, adding the cooked jackfruit, and topping with cabbage, pickled onions, tomatoes, avocados, cilantro, and optional vegan sour cream and salsa.
